The importance of collagen in the human body

It is the most abundant protein in the human body and forms bones, ligaments and tendons.

Our collaborator AMLSPORT tells us in this article the importance of the collagen in the formation of bones, cartilage, tendons and ligaments

The collagen constitutes 38% of the total protein in the human body, which indicates that with a huge difference is the most abundant in our body.

Form the bones, the cartilage, tendons and ligaments, which means that all skeletal protein is collagen; Although in the ligaments there is a part of elastin, the amino acids of this are the same as those of the collagen.

In addition, there is collagen in the cornea, gums, skin and scalp and precisely the deterioration or improvement in these tissues is appreciated more quickly than in the skeleton.

Once we have reviewed the importance of being able to form collagen, we must take into account the uniqueness of this protein, which is the only one in which 60% of the amino acids that compose it, are only three (glycine, proline and lysine) .

Then, If we want our body to form it, the ideal is to take collagen and, in fact, years ago, every day in the meal there was a soup in which bones had been cooked for hours; at home they put knee of calf and when they killed chickens, their skinned legs of the yellow skin and cut the nails. In other words, there was knowledge based on experience, that it was convenient to take collagen in soups or dishes such as "lamb's trotters" or pork legs, or "callos a la madrileña".

These meals were not expensive, but they require spending time in the kitchen which is something that people who work outside the home do not have and, furthermore, by dint of not doing so, they have lost culinary recipes that dominated our mothers and grandmothers.
